No-Bake Pineapple Cheesecake

Unfortunately (and especially for those sweet-averse), dessert tends to be an afterthought, oftentimes overshadowed by a heavy main; it takes something truly delicious to save room for. If you’re looking to impress come dessert time but are by no means a skilled baker, make this no-fail, No-Bake Pineapple Cheesecake by Taste Toronto for a taste of the tropics no matter the season.

To Serve

  • 1 cup heavy cream
  • ¼ cup icing sugar
  • Fresh mint leaves (optional)


  1. In a bowl, add the cream cheese, heavy cream, and icing sugar. Whisk everything until fully combined and smooth.
  2. Fold in the pineapple and mix well.
  3. Divide the biscuit crumbs into serving cups and top with cream cheese mixture.
  4. Transfer the cups to the fridge. Refrigerate for at least one hour before serving.

To Serve

  1. In a bowl of a stand mixer fitted with a whisk attachment, add the heavy cream and icing sugar. Whisk until medium peaks form.
  2. Transfer the cream into a piping bag and top the cheesecake with whipped cream. Alternatively, you can use a spoon and spoon the cream on top of each cheesecake.
  3. Garnish with fresh mint if using and enjoy!
