No-Bake Pineapple Cheesecake
Unfortunately (and especially for those sweet-averse), dessert tends to be an afterthought, oftentimes overshadowed by a heavy main; it takes something truly delicious to save room for. Inactive Time: 1 hour
Ingredients:
- 1 ½ cups cream cheese
- ½ cup heavy cream
- 2/3 cup icing sugar
- 2/3 cup SunSpun pineapple tidbits
- 2/3 cup biscuit crumbs (graham cracker or digestive cookies)
To Serve
- 1 cup heavy cream
- ¼ cup icing sugar
- Fresh mint leaves (optional)
Directions
- In a bowl, add the cream cheese, heavy cream, and icing sugar. Whisk everything until fully combined and smooth.
- Fold in the pineapple and mix well.
- Divide the biscuit crumbs into serving cups and top with cream cheese mixture.
- Transfer the cups to the fridge. Refrigerate for at least one hour before serving.
To Serve
- In a bowl of a stand mixer fitted with a whisk attachment, add the heavy cream and icing sugar. Whisk until medium peaks form.
- Transfer the cream into a piping bag and top the cheesecake with whipped cream. Alternatively, you can use a spoon and spoon the cream on top of each cheesecake.
- Garnish with fresh mint if using and enjoy!
