Baja Fish Tacos from Legends Tavern

Ingredients:
- 1 – 4 oz cod tail
- 3 oz. egg wash
- 2 oz. crushed salt crackers
- 2 oz. panko breadcrumbs
- ½ oz. Tex Mex seasoning
- 2 taco shells, grilled
- 2 oz. romaine lettuce, shredded
- 2 oz. sriracha mayo
- 4 oz. pico de gallo

Directions
- Dredge fish in crushed crackers, then dip in egg wash, then seasoned panko breadcrumb. Place on a cookie sheet lined with wax paper.
- Deep fry breaded cod and cut in half lengthways.
- Grill taco shells and place in taco holder; add guacamole.
- Place each piece of cod in each taco, top with pico de gallo, lettuce, and sriracha mayo before serving.
